Today I have a ridiculously easy recipe for butternut squash soup and as a bonus it’s cheap to make and involves no chopping!
We Love Soup for Lunch
My son is obsessed with soup for lunch which is great (because he’s not a great dinner eater – see my picky eater reward chart post!). Soup is the way I get a variety of vegetables into him, and we have it for lunch on most days.
Home Made Soup All The Way
We only eat home made soup – mainly because I find the shop bought ones really salty. I write this blog in the mornings whilst toots is at playgroup. Sometimes I have a long ‘to do list’ and don’t have time for chopping the veg for soup. Then I discovered an amazing saviour in the supermarket…..frozen butternut squash!
What a time saver! I love eating butternut squash but I HATE chopping it. So here is my super quick recipe:
Quick Butternut Squash Soup Recipe
- 1 or 2 bags of frozen chopped butternut squash
- 1 clove of garlic
- olive oil
- crush a clove of garlic in with a tiny splash of olive oil, add in butternut squash and warm and stir through.
- Add stock and cook for around 30 mins.
- Blitz with a hand blender.
